How do dining programs really work?

QUESTION:

I have heard of many dining programs such as Rewards Network, Passport Unlimited, Prime Card, etc. I would like to know how these programs really work. I mean, there must be something else beyond the fact of just asking a restaurant for a discount of 10% o 15%. If I were a restaurant owner, and considering the tight margins, I would be reluctant to give such a discount just for the promise of more future customers. I heard that companies like RN even lend money to their affiliates. Also, Do you consider this a good business?
